Becs Carter, Learning and Development Specialist, shares her #DoOneThing in celebration of World Mental Health Day.
I have always enjoyed baking but never seem to get around to doing much.
I set myself the goal of baking more and have enjoyed experimenting with vegan and gluten free recipes.
During lockdown, I perfected my vegan, gluten-free Battenburg! It tastes just like Mr Kipling and most importantly gave me a sense of enjoyment and achievement in a difficult time.
I obviously shared the fruits of my labour and got to know my neighbours that way. None of this would have happened for me in a typical year!
